They say timing is everything! I think I’d have to agree after the last 24 hours. Let me explain…
Yesterday, I had some bananas that were beginning to get too ripe and didn’t want them to go to waste so I decided to freeze some of them to use in smoothies. I peeled several of them and put them in the freezer, and carefully hung the remaining three back up on the banana holder.
Shortly afterwards I went back into the kitchen and found that the remaining three had started peeling themselves and got a good chuckle out of it. I thought it strange as I have never seen them do that before! Not wanting them to get infested with gnats, I carefully removed them from the hanger and laid the peeling back on the bananas, and then placed in the refrigerator.
Early this morning, I received a phone call from my daughter who had just found a new gluten-free mock oatmeal recipe. She had tried it this morning and said it was absolutely delicious, and couldn’t wait to share it with me. As soon as I heard her say that it reminded her of French toast I was totally SOLD of course… because I love French toast!!!
Ingredients for Gluten-free Mock Oatmeal
Makes one serving!
Instructions
Place banana in small dish and mash well with fork.
Place eggs another small dish and beat until frothy.
Pour eggs into banana dish and gently fold the banana into eggs.
Do NOT mix well- it should be clumpy. Look carefully and you can see clumps in the image below!!!
HEAT butter or coconut oil in small skillet over medium heat until hot.
Pour in banana/egg mixture into skillet and cook while stirring.
Add blueberries and continue cooking until until large, fluffy curds form and eggs are fully cooked through, about 3 minutes.
Remove from heat and place in a serving bowl; let cool briefly. Drizzle with honey or pure maple syrup.
Meanwhile, place 1 drop of Cinnamon Vitality essential oil onto spoon and mix into “oatmeal” after it has cooled briefly.
Serve and ENJOY! I suspect this is going to quickly become a favorite of yours too!!!
NOTE: You only want 1 drop of essential oil and Cinnamon Vitality comes out of the bottle quick. When adding essential oils to recipes you want to make sure you don’t accidentally drop more than one drop at a time, as they are very concentrated and strong. I like to place one drop on a spoon first, as this allows me to be able remove some of it, if needed, before adding to a dish.

A word of caution
Everyone seems to be jumping on the essential oil bandwagon nowadays. Most of the essential oils on the market are junk and can actually be DANGEROUS to ingest. They are nothing more than nice smelling scents and are actually toxic, synthetic, man-made chemical imitations of the real thing.

Oatmeal doesn’t have gluten in it, so why make “mock oatmeal”? This makes NO sense. And, very, very few people really have a gluten intolerance, so all this gluten-free nonsense is actually very harmful.
Pure oats and oatmeal don’t contain gluten unfortunately cross contamination is common. Also some people with celiac disease or non-celiac gluten sensitivity find that they react negatively to oats as well.
Here’s a statement from Quaker Oats regarding this problem: “Yes, oats are naturally gluten-free. However, during farming, transportation and storage, gluten-containing grains like wheat, rye, barley and spelt may be unintentionally introduced.”
