Once you try this Killer Sloppy Joe’s with Portobella Mushrooms recipe I’m sure it’s going to become a family favorite just as it has mine. Loaded with fiber, this recipe also uses portobella mushrooms instead of the traditional hamburger bun which is really helpful for those looking for a healthier version of this age-old favorite, or for those looking for recipes to support their weight management goals. This entree is relatively quick and easy to make which is always a plus in my opinion, and has become one that I use frequently any time of year.
KILLER SLOPPY JOE’S WITH PORTOBELLA MUSHROOMS
INGREDIENTS
large garlic clove
1 white or yellow onion, diced
extra-virgin olive oil (EVOO) or beef broth
1 pound ground beef
1 (15-ounce) can tomato sauce (preferably organic)
1-2 tablespoon Bragg’s raw apple cider vinegar (ACV)
1 packet Stevia Plus- for EACH Tbsp of ACV
1 green bell pepper (preferably organic), diced
2 stalks celery, diced
2-3 medium-sized carrots, shredded
1/4 tsp cayenne pepper (boosts metabolism), to taste
Jalapeño pepper (canned or fresh)- diced, add to taste (optional)
1 drop Young Living’s Vitality Basil essential oil (optional)
1 drop Young Living’s Vitality Oregano essential oil (ONLY 1 drop/or less- use toothpick) (optional)
4 Portobello mushrooms
DIRECTIONS
In large frying pan, add small amount of extra-virgin olive oil or beef broth and cook onion and garlic until slightly browned. Add ground beef and brown.
Add tomato sauce plus 1 to 2 tablespoons of ACV, 1 packet of Stevia for each tablespoon of ACV, along with diced bell peppers, diced celery, shredded carrots, and jalapeno’s; add cayenne pepper to taste too, if desired. Cook on medium heat for appx 15 minutes or until the mixture has slightly thickened.
In another pan sprayed with EVOO, place a large, bun-sized portabella mushroom in the pan. I like using a cast iron skillet. Using another pan or tea kettle filled with water (my fav- makes it nice and heavy) place it onto of the mushroom and cook until browned on both sides.
Place mushroom on place and add sloppy joe mixture and ENJOY! Serves 4

BEEF BROTH- using beef broth instead of vegetable oils is a great alternative, especially for those wanting to watch their weight

Vitality Oregano essential oil- A very HOT oil! ALWAYS DILUTE before taking internally. Keep out of reach of children. If pregnant or under a doctor’s care, consult your physician.
I love to use essential oils in recipes whenever possible because of their INCREDIBLE health benefits but I’m extra careful to add them last in cooked recipes, as I don’t want to destroy any of the healthy but delicate constituents in the oil that might be destroyed by heating it. Adding them to my recipes is just one more way of receiving their valuable benefits. Essential oils are extremely concentrated so it usually only takes a drop of two, depending on the essential oil, so be very careful when adding to recipes. Always check the label on the bottle to make sure that it is safe to ingest.
